Easy Peanut Butter Chocolate Chip Cookies

There are few things better than a batch of classic chocolate chip cookies, but that doesn't mean you can't add a little something to the mix. If you've been looking to change up your usual confectionery offering, it may be time to get a little bit nutty. Peanut butter chocolate chip cookies are just as scrumptious as their toll house counterparts. Here's a simple recipe that you can prepare in no time, courtesy of Reluctant Gourmet. This is a great opportunity to give your kids a little experience in the kitchen as well!

1/2 cup butter, room temperature
6 tablespoons brown sugar
6 tablespoons white sugar
1 egg
1 teaspoon vanilla extract
1 cup peanut butter
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup all-purpose flour
3/4 cup mini semi-sweet chocolate chips

First, preheat your oven to 375 degrees. Beat the butter, white and brown sugar together until they become creamy. Now add the vanilla extract and the egg, mixing everything together. Introduce the peanut butter, baking soda and salt and stir again, ensuring that the ingredients combine nicely. Finally, add the flour and chocolate chips.

Place small dollops of the dough onto a greased cookie sheet and use a fork or spoon to flatten them a bit. Allow the cookies to bake for about five minutes, or until the edges start to turn brown. Finally, remove them from the oven and allow to cool for about 10 minutes before serving. Voila! You've just made a delightful batch of peanut butter chocolate chip cookies that your kids may very well beg for in the future.
