How To Make Delicious Meatloaf

Meatloaf is one of those dishes that seems to elicit a strong opinion from everyone. Some people absolutely adore it, while others consider it little more than a hard, tasteless block of brown meat. Making delicious meatloaf isn't necessarily easy - if you're not careful, you'll end up with a dish that's dry, crumbly and not particularly tasty. However, this recipe, adapted from the Reluctant Gourmet, could be just what you need to convert any doubters. Serve this with some mashed potatoes and you may just have a weekly tradition on your hands.

3 tablespoons unsalted butter
3/4 cup onion, finely chopped
1/2 cup carrots, finely chopped
1/4 cup celery, finely chopped
2 teaspoons of minced garlic
1/4 teaspoon cayenne pepper
1 teaspoon ground cumin
3 eggs, well beaten
1/2 cup ketchup
1/2 cup half-and-half
2 pounds lean ground beef chuck
12 ounces sausage meat (not fennel-flavored Italian sausage)
3/4 cup fine fresh bread crumbs, toasted

Preheat your oven to 325 degrees. Meanwhile, melt the butter in a skillet and add the onions, carrots, celery and garlic. Cook for about 10 minutes and set aside to cool. Once it has reached room temperature, place in the oven for about an hour to chill.

Meanwhile, combine salt with black pepper, cayenne, cumin and eggs and beat well. Add the ketchup and half-and-half and blend everything thoroughly.

Next, add the meat and bread crumbs to the mixture, followed by the chilled veggies. Dampen your hands and mix everything together.

According to Food Network, you can now pack everything into a 10-inch loaf pan, ensuring that it resembles the shape of meatloaf. Turn the meatloaf out of the pan onto a baking sheet lined with parchment paper and place it in the oven. Allow to cook for 35 to 40 minutes.
