Quick and Easy Cheesecake

Although the prospect of making a cheesecake may seem daunting, it doesn't have to be. In fact, you can make a tasty and delicious version of the beloved dessert in no time at all and without any special equipment. If you're skeptical, here's a simple recipe, courtesy of Moms Who Think. It should take about 30 minutes from beginning to end, and incorporating your own changes into the mix is a fairly easy task.

2 packages (8 ounces each) cream cheese, softened
2/3 cup sugar
3 large eggs
1/2 teaspoon vanilla
3 tablespoons sugar
8 ounces sour cream
1 teaspoon vanilla

First, beat the cream cheese, 2/3 cups sugar sugar, eggs and 1/2 teaspoon vanilla in a mixer until everything is nice and smooth. Pour it all into a well-greased pie plate. If you like, you can add a graham cracker crust to the plate beforehand, but it's not necessary. Allow the mixture to bake for about 25 minutes and cool for another five.

Now combine the three tablespoons of sugar with the sour cream and single teaspoon of vanilla until you have a nice sauce. Spread it over the cheesecake, return everything to the warm oven for five minutes and you're done!

Looking for something even simpler? Cheesecake cones are about as easy as it gets, according to Rachel Ray. Simply mix together a package of softened cream cheese with a tub of whipped topping and a bit of sugar. Once everything is fully incorporated, all you have to do is scoop it out into waffle cones. It's not quite the same, but your guests may very well adore the fun take on the classic dessert.
