Give Mom A Break With a Delicious Mother's Day Lunch

Who says you have to go out for a lavish meal to make your mom feel appreciated? Sometimes it's the homemade touches that ensure a gift is truly special. If you fancy yourself a bit of a cook, there's quite a bit you can do for your mother. Even if you don't have time to prepare a complete dinner, lunch can be a nice touch. Given that the weather is likely to be nice and warm, this is an excellent opportunity to fix up a tasty salad that's sure to please. Here's a recipe for spring strawberry and spinach salad, courtesy of

1 bunch spinach, rinsed
10 large strawberries, sliced
1/2 cup white sugar
1 teaspoon salt
1/3 cup white wine vinegar
1 cup vegetable oil
1 tablespoon poppy seeds

Preparation is simple - in a large bowl, mix together the spinach and strawberries. In a blender, place the sugar, salt, vinegar, oil and poppy seeds. Blend the ingredients together until the dressing is nice and smooth. Pour the mixture over the spinach and strawberries, toss it all together to ensure even coverage and you're done!

This is an excellent salad to enjoy on a beautiful spring day outside on the patio - pair it with a pitcher of lemonade and you've got yourself a light and refreshing way to pass the afternoon. Feel free to add ingredients as you see fit - dried cranberries work particularly well with this recipe, as does goat cheese. Get creative! You never know what you might be able to come up with.
